i haven’t got any recipes but a suggestion i saw on master chef a few weeks back, is to grate or finely chop the vege and then saute in a fry pan with some butter, once its cooked puree and then add to whatever your cooking…that was garys way of hiding carrots and zuchinni in sausage rolls but you could do the same thing to a number of recipes.
I was going to say soup or my Mum made savoury mince the other night and grated all the veg into it – my 4 year old LOVED it, normally he won’t eat anything that has cooked veg in it!
a good website is… www.wholesometoddlerfood.com. Also if he has a fav food make it and add a new veg (that he dont like either grated or finely chopped) to the recipe. The website suggests adding noodles, sauce or grated cheese to a meal ur child is refusing to eat. Lol my daughter had curried sausages topped with a little tomato sauce friday night! Urgh!
i find with my monkey that rather than trying to get a few veg or more into one meal, i’ll do someting like potato and cauli soup (pureed) or potato flan (also has creamed corn in it) over the course of the week. Still gets plenty of veg in what I make, just spread out more.
I have an awesome recipe for mini chicken sausage rolls that have spring onion, garlic, zucchini and carrot in them but the kids never know! Let me know if you would like the recipe ๐
I to have a 2yr old that want eat vegies, i make him vegie spring rolls, veg ravaolli & sausage rolls with vegies in it, works wonders i know how frustrating it can be goodluck ๐
did you see the episode with masterchef where they put mashed veges in with the sausage meat to make sausage rolls?
You can do this for sweet potato, brocolli etc.. just steam and reduce water.. add a little butter if you want and puree, but make sure it’s not too wet a mixture. Add this as your binding ingredient to the mince.
Kids Chicken Patties (so yummy you will eat them too)
Makes 24 handful sized patties … See More 1 chicken breast 2 c frozen veg defrosted (i used broc carrot and cauli cause that’s what it had) 2 eggs 3-4 c boiled spud 1/4 c parmesan cheese 1 box of chicken stuffing mix
Put everything except the stuffing mix into the blender and blitzed it adding a small amount of water to keep it moving. in a bowl add the chicken mix and stuffing mix, combine. make hand full size patties and fry in a pan.
I found if i let the mix rest for 10 mins it wasn’t so sticky. You could make bite size ones too. I cooked the lot and will freeze the left overs in seal bags. {Trace}
we have that too ally, we call it multi mash, 1)cause its got multiple vegies in, and 2)cause its like a multi vitamin hit. i mash everything together, from potato, sweet potato, carrots, pumpkin, swedes, turnip, parsnip, any root vegies. also for a hit at the dinner table i often use food coloring to liven the color up. kids love the green one, … See Moreapparently it tastes the best….lol… used the same idea to make the kids drink water when they were babies…few drops food coloring and they think its cordial….trust me it works.
i grate carrot and zucchini into just about anything, pasta, meatballs, burgers, actually with burgers i make one that has chicken mince, sweet potato, carrot and you use a stick mixer to combine, they are pretty wet to cook but come up really well.
