Summer means salads. I always have two large salads made up in the fridge during Summer to allow for quick and easy side dishes during the week. In Summer we use our BBQ alot!!! It takes the heat out of the kitchen and it is also quick and easy to get dinners cooked while the kids swim and play.
A new addition to our Summer salad rotation is this Ham, Pesto and Penne Salad. I am using my favourite D’Orsogna Jarrah Honey Ham, Pulse Pasta (made from peas, lentils, chickpeas and borlotti beans), pesto, frozen peas and canned chickpeas – so simple, so tasty~!

INGREDIENTS
250gm D’Orsogna Jarrah Honey Ham, shaved
1 Packet (250gm dry weight) Pulse Pasta (San Remo Brand)
150gm Basil Pesto
400gm (1 Can) Chickpeas, rinsed and drained
1 Cup Frozen Peas
Optional – fresh Basil to serve
LET’S PUT IT ALL TOGETHER
- Cook the pasta according to the instructions on the packet. Note: don’t overcook this pasta otherwise it will break down. Cook for a maximum of 8 minutes and then drain and run cold tap water over it.
- Add the remaining ingredients to the pasta (reserving some of the ham to decorate on top) and mix gently to combine.
You can enjoy straight away or place in the fridge to completely chill.
Store in an airtight container in the fridge for up to 3 days.
