These stove top potatoes are a quicker alternative to baked potatoes. The two step process involves boiling cubed potatoes first until tender and then frying them with the D’Orsogna Maple Streaky Bacon. Cooking them with the bacon gives them a lovely flavour and colour.
Ready in under half them time it takes for traditional baked potatoes these make the perfect side dish for a roast, steak or sausages.
I made this dish to serve on Easter Sunday when family came over. It was easy to put together just before everything was ready as I had cooked the potatoes the day before and stored in the fridge so all I had to do was cook the bacon and add the potatoes, ready in 5 minutes.
INGREDIENTS
1kg Washed Potatoes, peeled and cubed
200gm D’Orosgna Maple Streaky Bacon (found in the fridge section at Woolworths)
1/2 Tsp Dried Italian Herbs
Salt and Pepper to taste
LET’S PUT IT ALL TOGETHER
1. Boil the potatoes on the stove top or microwave (in a microwave safe container) until soft. About 25 minutes.
2. Roughly dice the bacon and add to a fry pan over a medium high heat. Cook until the aroma of the maple is released and the bacon starts to gain some colour.
3. Add the cooked potatoes to the bacon and toss through. Cook for 5 minutes stiring regularly to make sure all the potatoes are coated in the maple bacon flavours and the potato starts to gain some colour.
4. Add a sprinkling of the herbs and salt and pepper to taste, stir through.
Enjoy straight from the pan.
Serves 8 as a side dish.
