Baileys Rocky Road Fudge

100mls Baileys (i have used that cheap cowboy liquer instead)
400g dark cooking chocolate, roughly chopped (i used milk as not a fan of dark)
40g unsalted butter
2/3 cup sweetened condensed milk
100g chopped unsalted pistachio nuts (again these can be substituted if you like)
150g shortbread biscuits, crushed
200g mini marshmallows
300g white chocolate, chopped

Grease 8cm x 20cm bar pan
Line with baking paper

In a heatproof bowl over a pan of water, mix baileys, dark chocolate, butter & condensed milk, allow to melt, stir until smooth
Remove from heat and allow to cool slightly
Stir in nuts, biscuit, marshmallow & 200g white chocolate
spread into pan, chill for 2-3 hrs
melt remainder of white chocolate, drizzle over fudge
cut into squares

Nutella Slice

1 cup SR flour
1 cup brown sugar
1/2 cup coconut
1/2 cup ground hazelnuts (hazlenut meal)
125g butter melted
2/3 cup nutella

Combine all ingredients (except nutella). Press into slice tin and bake at 180 for approx 15 minutes. Take out of oven and spread with nutella then bake for a further 10 minutes. I find if you zap the nutella for 30seconds or so in the microwave its easier to spread over the slice.

Optional: You can add extra nuts into the slice if you like. I usually roughly chop a block of hazlenut chocolate and mix that through. I also drizzle with melted white chocolate at the end.

No bake peppermint slice

500g malt biscuits (crushed)
1 tin sweet condensed milk
185g chopped butter
250g block peppermint chocolate, broken into pieces (cadburys is the best here)
185g choc bits
30g butter

Line slice tin with non stick baking paper.
Place condensed milk, butter & peppermint chocolate into a suacepan and stir over low heat until melted (or melt in microwave if you want).
Add crushed biscuits and mix well. Press mixture into pan. Melt choc bits and butter and pour over base. chill in fridge until set. *optional – I crush some of those peppermint slice bars and put over the top

Marshmallow slice

Melt 1pkt marshmallows,
1 block chocolate and 1/4 cup butter over low heat (stirring continuously).
Once melted mix in 3 cups rice bubbles and 1/2 – 3/4 cup coconut. press into slice pan and put in fridge.
Drizzle with melted chocolate or cover in sprinkles if you want. This slice is best kept in fridge as it does go soggy if left out to long.

Tim Tam Slice

Ingredients
1 packet chocolate cake mix
1 packet chocolate instant pudding
1 cup lemonade
2 eggs
1/3 cup vegetable oil
1 packet Tim Tams

Place everything except the tim tams in a mixing bowl and mix well.
Place in silicone slice form or cake tin (this is tupperware recipe so uses the kugellhof or slice form if you have them, but can use any silicone bakeware)
Break 9 Tim Tams up in half and push into the mixture
Microwave on high (800w) for 10-15 minutes
Check at 10 minutes and put back in if need be
Roughly chop the remaining 2 tim tams.
Stand cake for 5 minutes, tip out and cool slightly
Top with chopped Tim Tams and serve with cream

Caramel coconut slice – this one is a bit fiddly but YUMMY

1/2 cup plain flour
1/2 cup self-raising flour
1/2 cup) desiccated coconut
1/2 cup caster sugar
100g butter, melted
395g can sweetened condensed milk
2 tbs golden syrup
1/4 cup (55g) brown sugar
60g butter, melted, extra
2 eggs, lightly whisked
1/3 cup (75g) caster sugar, extra
2 cups (180g) desiccated coconut, extra

Preheat oven to 180°C
Combine sifted flours, coconut, caster sugar and butter
Press mixture evenly over base of slice tin lined with baking paper
Cook for 15 minutes, or until lightly browned
Cool slightly
Combine sweetened condensed milk, golden syrup, brown sugar and extra butter in a mixing bowl
Spread mixture evenly over base with a spatula
Combine eggs, extra sugar and extra coconut in the mixing bowl and sprinkle evenly over filling
Cook for further 20 minutes, or until lightly browned
Cool and remove from slice tin & cut slice into squares or triangles to serve

Oreo truffles

Ingredients
500g Oreo Biscuits
250 g Cream Cheese (very soft)
250g chocolate melts

Place the biscuits in the food processor and chop till fine
Add cream cheese and mix
Roll into balls and then set in the fridge to harden for 10 mins
Melt chocolate in microwave and then roll truffles in choc and set in fridge for 30 mins – this recipe would also work with tim tams

Cherry Ripe Slice

1 pkt marie biscuits, crushed
125g melted butter
1/2 tin sweet condensed milk
2 cherry ripe bars, chopped
250g melted chocolate
Mix all ingredients together (except chocolate). Press into slice tin and chill. Pour over melted chocolate and set. I sometimes add 1/2 cup coconut (just cause I love it )
