Today I made the Vegie Smugglers Spiced Chickpeas from Wendy’s Ebook The Complete Vegie Smugglers Lunchbox Planner. The planner is divided into 4 terms with a planner of what to pack for the lunchbox each week and a new recipe for each of the weeks. That’s a total of 40 new recipes and weekly planners.
Now back to these spiced chickpeas. A simple 80c can of chickpeas rinsed, drained and skins removed then tossed in some olive oil and dried seasoning of choice (I used Mixed Spice as it has cinnamon in it which would give me some sweeter flavours for the boys) has been transformed into a tasty and nutritious snack.

You can experiment will all different flavours like the Mexican spice mix, garam marsala, garlic powder, chilli (for mum and dad) etc.
Simply store in an airtight container after they have cooled.
