Tray bakes are my go to time savior. You literally put everything in uncooked, whack it in the oven and pull it out cooked. That’s it no fancy steps, no masses of dishes to clean just one tray.
I have cooked lamb chops and chicken tray bakes and last night I used the humble sausage. I did use a good quality thick sausage as they are perfect for baking. I used a beef sausage but you can use any flavour sausage you like.
INGREDIENTS
8 Thick Sausages of choice
1 Onion, peeled and sliced
1 Carrot, peeled and diced
1 Small Sweet Potato, peeled and diced
200gm Diced Tomatoes, canned (1/2 a standard can size)
8 Tsp Tomato Pesto
1/2 Cup Water
1 Cup Green Vege of Choice – I used broccoli
Optional: 1 Can Brown Lentils to serve
LET’S PUT IT ALL TOGETHER
- Line a large baking tray with baking paper. Add the ingredients in the order listed except for the green vegetables and lentils.
- Place into a preheated 180 degree Celsius oven uncovered to cook for 45 minutes.
- Remove from the oven give everything a mix through add the green vegetables and then cover with aluminum foil and cook for a further 15 minutes. (You can add the lentils at this point too, however I served them separately).
Remove from the oven and serve.
Serves 4-5
Store leftovers in the fridge in an airtight container for up to 3 days. Reheat in the microwave before eating.
