RICE BUBBLE & BANANA BISCUITS

125 gm butter, chopped
3/4 Cup Brown Sugar
1 Tsp Vanilla Essence
2 Eggs
2 Bananas, mashed
2 Cups Plain Flour
1 Tsp Cinnamon
1/2 Cup Self Raising Flour
5 Cups Rice Bubbles

LET’S PUT IT ALTOGETHER

1. Using an electric mixer, cream the butter and brown sugar for 2 minutes.
2. Add the vanilla and mix to combine.
3. Add the eggs one at a time beating well after each addition.
4. Add the mashed banana and best well until smooth.
5. Add the flour and cinnamon and beat until all combined.
6. Using a spoon stir through the rice bubbles gradually until all mixed in.
7. Place spoonfuls of the mixture on top lined trays and bake in a 180 degree oven for 15 minutes.

The texture of the biscuits when you bite it is, crunchy from the rice bubbles and soft – it isn’t a hard crunchy biscuit so it is great for toddlers.

    Made these today! Kids loved them.
    Froze a couple to try and they defrosted really well and tasted the same
