INGREDIENTS
4 Cups cooked spiral pasta
3 Rashers Bacon – diced and cooked
2 Tomatoes – diced and deseeded
1/2 Cup Chopped Parsley
1/4 Cup Chopped Garlic Chives
1/2 Cup Mayo
1/2 Cup Tomato Sauce
Salt & Pepper to taste
LET’S PUT IT ALTOGETHER
1. Cook the pasta as per packet directions – place in the fridge to cool – or freezer if in a hurry
2. Cook the diced bacon
3. In a bowl combine the mayo, tomato sauce, herbs and salt and pepper.
4. To this mix add the chopped tomatoes, cooked bacon and cooled pasta
5. Mix well to combine and return to the fridge to cool until ready to eat.
You can also use: Corn, capsicum, red onion, green beans or avocado.
I used what I had on hand as a quick last minute side dish.
It would also make a great summer main meal with added cooked chicken, tuna, smoked salmon.
