When the kids ask what’s for dinner and I tell them sausages you can hear the shear delight in their voice as they make their way to the table. Yes, sausages are a favourite with most children and because this is the case I like to make my own so that I know what is in them and sometimes I can even get some extra vegetables into them.
I had a packet of D’Orsogna Deli Fresh Spicy Chorizo in the fridge (you will find this in the cold fridges of Woolworths) and decided to give it a whirl in a sausage mix. Now I was a little hesitant about putting the spicy chorizo into the sausage and having the kids like them but the “spiciness” is diluted when it is put together with the milder flavour of the pork mince. The boys both gobbled them up.
I have made them in the food processor as it makes it a little easier and quicker, you can place everything into a bowl and give it a good squish with your hands to combine everything really well if you don’t own one.
INGREDIENTS
1 Packet D’Orsogna Deli Fresh Spicy Chorizo, 80g, chopped
500gm Pork Mince
1 Onion, diced
1 Egg
1/2 Cup Dried breadcrumbs
1 Tbs Sweet Paprika
2 Tbs Fresh Parsley, chopped
Salt and pepper
LETS PUT IT ALL TOGETHER
1. Place all the ingredients into the bowl of a food processor to thermo style machine and process until well combined (about 20 seconds).
2. Take golf ball size amounts of the mix and roll into small sausages. Repeat until all the mix is used. Leave in the fridge for 1 hour or during the day for the flavours to develop.
3. Spay a non stick frypan with cooking oil and cook the sausages over a medium heat. Turn regularly to make sure they cook evenly and don’t burn.
Serve with a salad and oven baked chips.
I have topped them with a simple sauce of Sweet Chilli Relish mixed with natural greek yoghurt.

Store cooked leftovers in the fridge in an airtight container for up to 3 days.
Uncooked mix can be kept in the fridge for 1 day.
