I have decided to combine this Vitamin C & A packed, low GI fruit into some cookies which I know the boys won’t turn their noses up at.
INGREDIENTS
3/4 Cup Butter, softened and chopped
1 Cup Caster Sugar
1 Cup Pawpaw that has been mashed
1 Egg
1 Tsp Vanilla Essence
3 Cups Plain Flour
1 Tsp Baking Powder
1/4 Tsp Ground Ginger
1/4 Tsp Cinnamon
1/2 Tsp Mixed Spice
1/2 Cup White Chocolate Buttons
LET’S PUT IT ALTOGETHER
1. Cream the butter in sugar with an electric mixer. Add the egg, vanilla essence and pawpaw and beat for a further 30 seconds.
3. Roll into tablespoon balls (you may need a little flour on your hands to do this) and place onto baking paper on a tray.

4. Repeat until all the mixture has been rolled. Press down lightly with your fingers.
5. Bake in a 180 degree Celsius oven for 15 minutes or until slightly golden.
Serve with a dusting of icing sugar.
PAPPAW FROZEN YOGHURT
Using the KAMBROOK Little chef Ice Cream maker I decided to use the remaining in pawpaw to make some frozen yoghurt.
Simply take 1 Cup Vanilla Yoghurt and add 3/4 Cup Pawpaw mashed.

Place in the ice cream maker and churn for 7 minutes.

Place into moulds and set in the fridge for 1 hour to make firmer.
