This is another great recipe using Weet-Bix that is no bake and the perfect addition to the lunchbox.
INGREDIENTS
5 Weetbix
1 Cup Dates, pitted
1/2 Cup Sultana and Seed Mix
1/2 Cup Desiccated Coconut
4 Tbs Cocoa
2 Tbs Honey
2 Tbs Water
100gm Dark Chocolate, melted
LET’S PUT IT ALL TOGETHER
1. Using a food processor or thermostyle appliance, place all the ingredients except the dark chocolate into the bowl and process until broken down and it starts to clump together.
2. Spoon into a lined 20cm x 20cm baking tin and flatten down with the back of the spoon until level.
3. Place the chocolate into a microwave safe bowl and heat on medium high for 30 seconds, remove and mix. Return to the microwave for a further 30 seconds if it is not melted. Pour over the weet-bix mix and spread out. Sprinkle with extra coconut. Place into the fridge to set for 2 hours.
4. Once set, cut into squares.
Store in an air tight container in the fridge for up to 2 weeks.

So simple and really tasty! My alterations were – rice malt syrup, cacao along with my own mix of raisins, flax, Sunflower seeds and pepitas. Thanks for the recipe this will become a regular!
