MINI BAKED BLUEBERRY CHEESECAKES

INGREDIENTS

100gm biscuits – crushed
20 grams butter – melted

250 grams light cream cheese
1/3 cup castor sugar
1 teaspoon vanilla essence
1 Egg
2 teaspoons plain flour
1/3 cup squished blueberries

LETS PUT IT ALTOGETHER.

1. Crush the biscuits in a zip lock bag with a rolling pin.  Add the melted butter to the crushed biscuits in the bag and combine.
2. Place the cream cheese, sugar and vanilla essence in a food processor and process until creamy
3. Add the egg and process until combined.
4. Fold in the blueberries and plain flour
5. Place the biscuit into patty cake liners that have been placed in a 12 hole muffin tray. Repeat until all used.
6. Pour the cream cheese mixture onto of the biscuit base.
7. Place in a 160 degree oven and cook for 20 – 25 minutes.
8. Leave to cool in the oven with the door agar and then refrigerate.

I only got 8 with this mixture.
