I like to start a Monday with a meal that everyone loves to eat and I love that it is packed full of vegetables, it is also a meal that provide leftovers for lunch and later in the week.
I am popping the slow cooker on for Tuesday, the start of my out of house work week so that I don’t feel under the pump when I get home.
On Wednesday I will be using the remaining portion of the beef mince I bought and used half of on Monday to make beef burgers. I always add carrot and zucchini to my burger patties.
Thursday will be leftover night, we should have enough left from Monday and Tuesday night to eat up and make sure we don’t waste anything.
Friday night – we went to the movies so it was a quick dinner of pies and chips.
Saturday night we had family over so I made a Roast Pork with all the trimmings.
Sunday night I felt like something with a satay flavour so I butterflied the whole chicken I had coated it in my satay sauce recipe and cooked it in the oven for 2 hours. I also baked cauliflower, broccoli and carrot that I then latter placed into a pot and stirred through the remaining satay sauce.
REMINDER – My meal plan week starts on a Friday as that is when I do the grocery shop.

THURSDAY – Leftovers
FRIDAY – Pies and Chips
SATURDAY – Roast Pork
SUNDAY – Satay Chicken, Vegetables and Rice
