Marinated Chicken Lovely Legs

Chicken Lovely Legs were on special last week, so of course a couple of packets jumped in my trolley…one for the freezer one to cook during the week.  Lovely Legs are the chicken drumstick with no skin and the stick part trimmed and cut short.  They are great for slow roasting and marinating.

I did an asian inspired marinade and served them with some tumeric rice (which has a lovely colour) and peas.  A budget friendly meal that serves a family of 4-6 for well under $10.

INGREDIENTS

7 Chicken Lovely Legs
2 Tbs Honey
2 Tbs Soy Sauce
2 Tbs Oyster Sauce
2 Tbs Plum Sauce
1 Tsp Minced Ginger
1 Tsp Minced Garlic
Salt and Pepper
1 Onion, sliced
3 Mushrooms, sliced
Olive Oil
Cooked rice with 1 tsp of dried turmeric or a couple of pieces of fresh turmeric – for colour and slight flavour.
Cooked frozen peas

LETS PUT IT ALL TOGETHER

1. In a large bowl place all the marinade ingredients and mix well.  Add the chicken lovely legs and toss through to coat.  Place in the fridge and leave to marinade.  Best left to marinade all day but an hour will be ok too.

2. Once marinated, place them into a baking dish along with the marinade, the sliced onion and mushrooms.  Drizzle with a little olive oil and bake in a 160 degree celicus oven for 1.5 hours.  In the last 10 minutes you can increase the oven temp to 200 degrees celcius to give them a lovely brown colour.
