Lemon Pie Bites

My fruit bowl is overflowing with lemons as my husbands lovely clients have been passing on their lovely homegrown ones.  Last week I made my One Bowl Lemon Loaf, this week I experiment with this Lemon Pie Bite recipe and it’s a winner.  Tangy, creamy and just the right amount of sweetness – just like a lemon pie but not.

Lemon Pie Bites

INGREDIENTS

125gm Milk Arrowroot Biscuits
Juice of 1 Lemon
1/2 Cup Coconut Oil
2 Tbs Maple Syrup
1 Tsp Vanilla Extract
1 Cup Desiccated Coconut (plus extra for rolling)

LET’S PUT IT ALL TOGETHER

  1. In the bowl of a food processor or thermostyle appliance, place all of the ingredients.  Process until the biscuits are broken down and the mix starts to come together.
  2. Roll tablespoon sized amounts into balls and then roll in coconut.
  3. Place in the fridge to set for 30 minutes before placing into an airtight container.

Makes approximately 15

Store in an airtight container in the fridge for a week.

Freezer Friendly: Place in a ziplock bag and freeze for up to 3 months.

    What can I substitute for the milk arrowroot biscuits as I have never seen them in Ireland ? (Rich tea type ones?). Thanks

      Hi Emma, you can use any plain sweet biscuit.
