Layered Watermelon & Yoghurt Iceblocks

The weather is definitely heating up now that we are nearly two weeks into Summer. The beautiful fresh Summer fruit is also hitting the shops at great prices which means we will be eating lots this Summer and finding new ways to make fruit interesting is on the agenda.

These layered watermelon and yoghurt iceblocks are a nice cool treat full of all the goodness of fruit and yoghurt.
INGREDIENTS
1/4 Whole Watermelon 
1 Cup Frozen Yoghurt or normal yoghurt
 
LET’S PUT IT ALTOGETHER 

1. Simply place the cut up watermelon into a food processor or blender and process until smooth.

2. Pour into iceblock moulds leaving about 1.5cm of space for the yoghurt. Place in the freezer until the watermelon is just hard to touch.
3. Top with melted frozen yoghurt or normal yoghurt and insert the iceblock stick. Place back in the freezer for 3-4 hours or until completely set.

4. Remove from the mould with a little running water on the outside or the heat from your hand should do the trick.
