How good is caramel popcorn? I could sit there with a good movie and quite happily crunch away on a bowl of it, and because it is so easy to eat I won’t be making this every week as I may end up the size of a balloon hahaha.
Homemade caramel popcorn is the perfect sweet treat for movie night or birthday parties. It is so easy to make and some much cheaper than buying the premade version. Also you only need three ingredients; pop corn, brown sugar and butter.
Now if salted caramel is your thing add a sprinkling of salt and you all sorted!
The final step of baking in the oven sets the caramel and means that you can store in it an airtight container for several days without it losing its crunch, which means if you are making it for a party you can make it in advance.
INGREDIENTS
1/2 Cup unpopped corn kernels
1 Tbs Sunflower Oil
1 Cup Brown Sugar
100gm Butter
LET’S PUT IT ALL TOGETHER
- Place a large pot (with a lid) over a medium high heat. Add the oil and corn kernels. Place the lid on. Once the corn starts to pop give the pot a shake regularly to make sure all the corn pops and the popcorn doesn’t burn. Once all the corn has finished popping remove from the heat.
- In a small saucepan place the brown sugar and butter. Bring to the boil and once boiling continue to boil for 4 minutes stirring frequently to ensure it doesn’t burn.
- Pour over the popcorn straight away (be careful, it is really hot and will burn your fingers) and mix with a large spoon. Pour onto a lined baking tray (you may need two) and spread out evenly. If you want to make it salted add a sprinkling of salt over the caramel popcorn now.
- Place into a preheated 160 degree Celsius oven and bake for 15 minutes. This will make the caramel set and the popcorn crunchy. Remove from the oven and allow to cool completely on the tray before transferring to air tight containers.
Makes approx 10 cups
Store in an airtight container in the cupboard for up to one week.
