HOMEMADE BAKED BEANS

INGREDIENTS

1/2 Onion, sliced finely
1/4 Capsicum, sliced finely
4 Grape Tomatoes, sliced in half
1 Tsp Gourmet Garden Chunky Garlic 
1 Tsp Gourmet Garden Basil 
1/2 Tsp Gourmet Garden Thyme 
1 Tin 4 Bean Mix – or tinned beans of choice
3 Tbs Worcestershire Sauce
1 Cup Passata
1 Tsp Sugar
1/4 Cup Water  

LET’S PUT IT ALTOGETHER

  1. Place the onion, capsicum, tomatoes, garlic, basil and thyme in a small saucepan with a little olive oil. 
  2. Cook until the onion starts to soften stirring frequently. 
  3. Add the beans, worcestershire sauce, Passata, sugar and water to the saucepan and stir to combine. 
  4. Reduce to a simmer and cook until the mix starts to thicken (approx 15 minutes). 
  5. Serve on toast. 

SERVES 2 

This is a lovely alternative to shop bought baked beans. There is a lot of flavour and texture that make it a complete vegetarian meal and a great start to the day. Make ahead the night before and store in the fridge to enjoy for breakfast the next morning heated up.
