INGREDIENTS
1/2 Onion, sliced finely
1/4 Capsicum, sliced finely
4 Grape Tomatoes, sliced in half
1 Tsp Gourmet Garden Chunky Garlic
1 Tsp Gourmet Garden Basil
1/2 Tsp Gourmet Garden Thyme
1 Tin 4 Bean Mix – or tinned beans of choice
3 Tbs Worcestershire Sauce
1 Cup Passata
1 Tsp Sugar
1/4 Cup Water
LET’S PUT IT ALTOGETHER
- Place the onion, capsicum, tomatoes, garlic, basil and thyme in a small saucepan with a little olive oil.
- Cook until the onion starts to soften stirring frequently.
- Add the beans, worcestershire sauce, Passata, sugar and water to the saucepan and stir to combine.
- Reduce to a simmer and cook until the mix starts to thicken (approx 15 minutes).
- Serve on toast.
SERVES 2
This is a lovely alternative to shop bought baked beans. There is a lot of flavour and texture that make it a complete vegetarian meal and a great start to the day. Make ahead the night before and store in the fridge to enjoy for breakfast the next morning heated up.
