This Healthy Apple and Cinnamon loaf is free from added unnatural sugar and has the added goodness of wholemeal flour to boost its fibre content. With a total of four apples used in the loaf you will be happy that the kids are adding to their fruit intake for the day.
To boost the nutrient content of this loaf even more try adding a handful of your favourite seeds or nuts.
INGREDIENTS
3 Large Red Apples, grated
3 Eggs
1/4 Cup Light Olive Oil or oil of choice eg. coconut oil
1 Cup Self Raising Flour
1 Cup Wholemeal Self Raising Flour
1 Tsp Baking Powder
1 Tsp Cinnamon, ground
1 Red Apple, sliced
Optional: add seeds and nuts
LETS PUT IT ALL TOGETHER
1. Place all the ingredients into a large bowl and mix with a spoon until just combined. Don’t over mix.
2. Spoon the mix into a lined loaf tin and then place the sliced apple on the top. Place into a preheated 180 degree celcius oven for 45-50 minutes or until it bounces back when touched.
Makes 1 Loaf
Store in the fridge for up to 7 days.
Freezer friendly: slice into portions and place into ziplock bags. Freeze for up to 3 months. When ready to eat remove from the freezer and allow to defrost.
