Fattoush Lebanese Bread Salad

Fattoush is a lebanese salad made from toasted pieces of lebanese bread and combined with lovely fresh vegetables. It is topped with a sumac and lemon dressing which gives the salad its sweet sour taste. Perfect to eat on its own or add some grilled chicken and feta cheese.

INGREDIENTS
1 Lebanese Flat Bread, ripped into bite sized pieces
1/2 Icebreg lettuce, shredded
1 Punnet Cherry Tomatoes, sliced in half
1 Lebanese Cucumber, seeded and diced
1/2 Spanish Onion, cubed
2 Tbs Fresh Parsely, chopped
2 Tbs Fresh Mint (optional)

Dressing

1/4 Cup Lemon Juice
1/4 Cup Olive Oil
1 Tsp Salt
1 Tsp Black pepper
1 Tsp Sumac spice

LETS PUT IT ALL TOGETHER
1. Place the broken up Lebanese Bread onto a baking tray and bake in a 200 degree Celsius oven for 5 minutes or until crunchy.
2. In a bowl place the lettuce and toss through through the remaining vegetables and herbs.
3. Stir through the crunchy Lebanese Bread.
4. In a bowl combine the dressing ingredients and whisk to combine. Pour over the salad.

Serves 2

Best eaten on the day of making.
