Rocky Road is the perfect treat to enjoy at Christmas or anytime really. Combining together everything that you love that is sweet with chocolate leads to the perfect chocoholics chunk of yumminess.
This year I have been a bit late to the party for my Christmas baking so my easy rocky road is perfect as you can get it together in 5 minutes.
Wrap up in cellophane and give as gifts (make sure the receiver keeps it in the fridge) or serve on your Christmas table.
INGREDIENTS
250gm Eating Chocolate
Handful of your favourite lollies cut or pulled into smaller pieces
Handful of nuts
You can also use mini marshmallows, coconut, candy canes, smarties, MM’s etc
LETS PUT IT ALL TOGETHER
1. Line 12 mini muffin tray holes with mini muffin liners.
2. Break the chocolate into a microwave safe bowl, place into the microwave. Use a medium setting for 1 minute. After the minute remove the chocolate from the microwave and give it a mix. It should be all melted. If not give it 10 second bursts until it is melted.
3. Place your fillings evenly into the 12 liners and then top with the melted chocolate.
4. Place in the fridge to set for 1 hour.
Peel away the liner and eat.
