EASY PASSIONFRUIT & COCONUT CAKE

INGREDIENTS

150 grm reduced fat margarine or butter softened
3/4 cup caster sugar
3 eggs
Pulp of 3 Passionfruit
1 1/3 Cups self raising flour
1/2 Cup coconut
1/2 tsp baking powder
1/2 cup milk

LET’S PUT IT ALTOGETHER

1. Place all ingredients in a food processor and process for 3-5 minutes until smooth.
2. Bake in a 180 degree oven for 30-40 minutes

      A 20cm circle cake pan is what I use.

    When you say coconut, do you mean dessicated coconut or coconut milk?

      Desiccated coconut.

      Hi Kristie, you could use a stand or hand mixer instead.

    Hi this sounds delicious! Would this cake be okay to eat if I made it ahead of time? How far ahead would be the limit?

      I would suggest only make it the day before you want to serve it, other wise make it and freeze it and then defrost on the day you will serve and ice it.

    Hi, just wondering if this cake is suitable for layering? I’m wanting to do 3 layers high with buttercream between each layer but need a cake that’ll be strong enough. Thanks, Louise

      Hi Louise, yes it would be perfect for that. If you are making three layers I suggest making three separate batches. You’ll get a lovely high cake. Try adding some passionfruit to the buttercream after whipping for added flavour.

      This cake goes very well with a layer made of chocolate. Try white chocolate shavings on top.

      HI Carole, yes you could. I would add passionfruit as well yo boost the flavour as the mango flavour does become minimal when baked.

    Bit of a silly question, should I include the seeds in the pulp? I’ve never cooked with passion fruit before and I’m not much of a baker so wouldn’t know!
