I’ve had such a busy week with work, still adjusting to school drop offs and picks ups as our original plans haven’t turned out so I have had to adjust my working days etc and Mr 5 is still getting over a chest infection. But I have made it to Friday and tomorrow is Valentine’s Day.
We don’t go over the top with flowers and presents at our house, but we do love our chocolate!
Valentine’s Day is the day that hubby and I met, 8 years ago at McDonald’s after being introduced to each other by a mutual friend. So it does hold a special meaning in my heart.
After a crazy morning at work, food shopping and cleaning I came home and made the boys (including hubby) a Valentine’s Day treat. I needed something quick and easy and these fit the bill.
Using a marble gives you a heart shaped cupcake -perfect. A little icing some heart and lady beetle chocolates and they were ready.
INGREDIENTS
1 Quantity of Chocolate Cupcake or muffin Mix (you can use packet if you wish)
1 Quantity of Butter cream or Whipped cream
Chocolates to decorate
12 Marbles
12 Patty Pan Liners
LETS PUT IT ALL TOGETHER
1. Make the cupcake mixture and pour evenly into 12 patty trays in a muffin try. Only fill half way.
2. Place a marble between the muffin tray and the patty pan liner, it will form a heart shape.
3. Bake in a 180 degree celcius oven for 15 minutes. Remove from the oven and allow to cool for 5 minutes.
4. Pull the marble away from the patty liner (it will take some of the cupcake with it, this will give you the heart indent)
5. Once cooled completely, pipe with the icing and top with a chocolate.
Refrigerate for up to 3 days.
If making Whipped Cream icing: In a mixing bowl place 200ml Thickened Cream, 2 Tbs Icing Sugar, 1 Tbs Cocoa and whisk with a stand mixer until thick and holds it shape.
