Bread doesn’t always have to be the limelight of our lunches. Who said you can’t take your filling and make it the holder?
In this recipe Matt Golinski and I switch things up a bit and use the larger slices of the D”Orsogna Deli Fresh Premium Leg Ham to hold our fillings for easy lunch recipe that would also look great on a party table. So if you can’t eat bread, are sick of the same boring sandwiches this recipe is for you. Also, there are no crumbs!!

INGREDIENTS
1 pkt D’Orsogna Deli Fresh Premium Leg Ham
250gm Cottage Cheese
2 tbs Semi Dried Tomatoes, diced
1 tbs Chopped Parsley
Salt and pepper
LETS PUT IT ALL TOGETHER
1. Mix together the cottage cheese, chopped tomatoes, herbs and salt and pepper.
2. Lay out the slices of ham and place 2 tbs of cheese mixture in the middle of each slice.
3. Fold in the sides and roll up to form a cigar shape.
Make ahead of time and store in the fridge until you are ready to enjoy.

I use a nice big crispy green lettuce leaf and make a chicken and salad wrap, it’s delicious and fresh! I also do this for tacos instead of a corn chip shell to make them healthier.
I love grilling sliced eggplant, using avocado as butter, adding tomatoes, cheddar cheese, grilled breast chicken, bacon and a touch of basil and salt, such a great alternative to bread and tastes amazing.
I use lettuce leaves for mini wraps, with some chicken, hommus, capsicum and carrot slices.

I use many alternatives to bread & love trying new recipes & experimenting. currently enjoying making rice paper rolls with a variety of interesting different fillings
I some times use egg, I make a scrambled egg mix but when cooking I cook it like a crepe and use it like pita bread, the kids love it 🙂
I find ready-made pastry helpful in creating lunch-box friendly snacks, and a refreshing change from bread. I divide leftover casserole, curry or tagine between small squares of pastry, and fold them over to make triangles. They’re and easy no-mess finger-food for a lunch box and a sure-fire way of making sure leftovers get eaten!
I like to use cucumber , cut into subs (lengthways) scoop out the seeds & fill with cottage cheese , shredded meat (I like Turkey breast) & dijon mustard .

My kids love omelettes and they like fillings (ham or chicken and cheese) wrapped up in them like a wrap. I love rice paper rolls
We like to have wraps as a change from bread. This idea is great though, will be giving it a try.
