Asparagus and Avocado are in season which means they taste there best and are packed full of goodness that our bodies need. In this recipe we have matched them with one of my favourites the D’Orsogna Deli Fresh Chicken. It’s one of my favourites because it tastes just like a roasted chicken (because it is) with out having to put the hours into roasting it.
It is a perfect sandwich filling, pizza topping and in this case salad stand out.

INGREDIENTS
1 pkt D’Orsogna Deli Fresh Roast Chicken, cut into strips
1 Ripe Avocado, peeled and diced
1 Bunch Asparagus, cut into 2.5cm pieces
100gm Mixed Salad Leaves
Juice of 1 Lemon
2 tbs Olive oil
1 tsp Wholeseed Mustard
Salt and pepper
LETS PUT IT ALL TOGETHER
1. Blanch the asparagus in salted boiling water for 2 minutes, drain and run under cold water to cool.
2. Mix with the chicken strips, avocado and mixed leaves.
3. Whisk together the lemon juice, mustard and olive oil.
4. Dress the salad and season with salt and pepper.
Serves 4 as a side salad 2 as a meal.

Feta! I used crumbled feta and freshly squeezed lemon juice as an alternative to dressing. Kids (2 and 3) are starting to love it too!
