CHRISTMAS LUNCH – ATLANTIC SALMON & MUSHROOM PUFF SLICE

1 Fillet Atlantic Salmon, deskinned and cut into small cubes.
4 Mushrooms, sliced
1 Onion Sliced finely, red onion preferred
4 Eggs
1 Cup Cream
1 Tbs Gourmet Garden Coriander
2 Sheets puff pastry, or enough to fit your tray. The tray used is a standard size biscuit tray with a lip.
Salt and Pepper

LET’S PUT IT ALTOGETHER

1. In a bowl place the eggs, cream, coriander, salt and pepper and whisk to combine.
2. Spray your tray with cooking spray and then lay the defrosted puff pastry on it ensuring no holes or gaps. With the Han over cut off and place on the edges to help form the edge.
3. Pour the egg mix on the puff pastry.
4. Top with the Salmon, mushrooms, and onion.
5. Bake in a 200 degree Celsius oven until the pastry browns and the egg is set. Approx 25 minutes.

Serve as a finger food starter or enjoy with a salad for lunch.
