A mug cake is a cake you make when you feel like cake but don’t want to wait the normal time for a cake to be made before you can eat it. Perfectly portioned in a mug you can enjoy them straight from the mug or tip out onto a plate and layer up with cream, ice cream you name it.
The mug cake also makes the perfect quick dessert in about 2 minutes you will be sitting down to a warm cake for one. There are no baking pans to clean, beaters to lick just your mug and a spoon – sounds perfect right!
This banana and choc chip mug cake is absolutely delicious and once you see how easy it is to make you will make it over and over again.
INGREDIENTS
1 Overripe Banana
1 Tbs Butter
1 Egg -extra large size
1 Tbs Sugar
1/2 Tsp Vanilla Essence
1/3 Cup Self Raising Flour
Choc Chips
LET’S PUT IT ALL TOGETHER
1. In a large mug place the butter and place in the microwave for 10 seconds to soften it. Then add the remaining ingredients and mix until just combined with a fork.
2. Add a sprinkling of choc chips and gently mix through.
3. Place in the microwave on high for 2 minutes. Check and make sure it bounces back when you touch it on top, if it is still a little moist on top place it back in the microwave for a further 20 seconds.
Eat straight from the mug or use a knife to loosen the edge of the cake from the mug and turn out on to a plate and serve with cream and extra choc chips while it is still warm.

How can one egg weigh 700gms?
I have updated the recipe to read 1 Egg – Extra Large size. The 700g was for ease of reference as that is what is on the carton of eggs when you buy them.
