I have always felt that you shouldn’t mess with tradition when it comes to recipes that were derived many many years ago out of necessity. However, I also believe that we need to adapt our creations to fit in with what we either a. have in our pantry or b. our dietary requirements. After all these biscuits were originally created out of a necessity to make a biscuit packed full of energy and be able to be easily transported to the men on the front line. Here is my recipe created from what was already in my cupboard and my desire to reduce the sugar and fat content of the biscuit.
INGREDIENTS
1 Cup Muesli – I used fruit and nut
1 Cup Plain Flour
1/2 Cup Raw Sugar
80 gm butter, melted
2 Tbs Treacle
2 Tbs Hot Water
1 Tsp Bicarbonate Soda Powder
LET’S PUT IT ALTOGETHER
1. Preheat the oven to 180 degree celcius and line a baking tray with baking paper.
2. In a large bowl add all the dry ingredients and mix to combine.
3. Add all the wet ingredients and mix to form a dough.
4. Roll small ball size amounts of the mixture and place on the baking tray, repeat until all the mixture is used.
5. With the back of a fort press down lightly to flatten a little.
6. Bake for 15 minutes or until golden brown. Cool on a wire rack.
7. Place in a tin for up to 5 days.
Makes 20-24 biscuits
