Burgers are so much fun to eat, well my kids think so as they practically cheer when I tell them it’s burger night. We love eating normal beef burgers but I love exploring new ways to make our burger nights even more interesting by switching up the burger patty I make.
These chicken and zucchini burgers are super tasty and of course easy to make. The breadcrumbs on the outside gives them a nice crunchy coating. You can eat these in a burger or on their own with side dishes.
You can also make them during the day and leave in the fridge until you are ready to cook them in the evening.
INGREDIENTS
500gm Chicken Mince
1 Zucchini, peeled and grated
1 Egg
1 Tbs Minced Garlic
2 Tbs Breadcrumbs
1 Tsp Dried Mixed Herbs
Salt and pepper to taste
Oil, for frying
Extra breadcrumbs, for coating.
LET’S PUT IT ALL TOGETHER
1. In a bowl add all the ingredients and mix well to combine. You will have to get your hands into the mix to work the proteins in the chicken mince and the egg so that it binds together.
2. Pour breadcrumbs onto a plate. Wet your hands with a little water and then take a handful of the mix and work into a patty shape. Place onto the breadcrumbs and coat. Place onto a clean plate. Repeat for the remaining mix. Place into the fridge for about 30 minutes to let them firm up.
3. Add a thin layer of oil to a non-stick frypan over a medium high heat. Place the patties into the pan once the oil is hot. Cook for about 4 minutes before flipping and cooking on the other side for the same amount of time. They are cooked once they bounce back when touched.
4. Place onto a paper towel to drain any excess oil.
Serve on a bun with your salad fillings of choice.
